Updates from DTSA’s 4th Street Market


What’s leaving: Not including Recess, the rest of Jason Quinn’s outlets (Noodle Tramp, PFC and Wagyu Chuck), Waffles Inc. All closing February 1.

What’s coming in: Alta Baja Market (replacing Honor Roll, and co-run by Delilah Snell, wife of our Mexican-in-Chief), Pig Pen (from the GD Bro/Afters team), Jinny’s, Terra (from the owners at MAR), Sit Low Pho.

With all the changes going on inside Downtown Santa Ana’s 4th Street Market, we wanted to focus on a couple of the incoming concepts. Market veteran and luxe lonchera man Hop Phan plans to add another member to his Dos Chinos family. Already offering on his existing menu, Hop’s Sit Low Pho Vietnamese concept will deliver much more than noodles. Think sweet potato shrimp fritters, nuoc mam butter wings, vermicelli noodle salads with thit nuong and a pot-au-feu with roasted vegetables. Per Phan,

Vietnamese food has always been our first love, and we (Viet Tran and I) have slightly evolved these traditional Vietnamese recipes. Not much, but hopefully it will be just noticeable . . .or leave people wondering about certain flavors and aromas. Sit Low Pho is our Vietnamese.

Also a previous On the Line subject, Nathaniel Nguyen’s Jinny’s Pizzeria is a seasonal concept featuring scratch-made ingredients, farm fresh produce and an artisian edge. According to Nathaniel, 

Our dough is made using a multi-step process to yield an artisan crust. Cheeses are grated in-house daily. Made-from-scratch sauces and dressings. Sausage that is ground and seasoned in-house. And carefully sourced produce that is local whenever possible. It’s what we like to call California-style pizza with a dash of New York attitude!
