Here are just some of Kapit Bahay's game pieces: about four or five different fish deep-fried until the bones become jelly; pork and chicken adobo marinated long into the day in a murky broth of soy sauce, ginger, vinegar and garlic; sweet-sour viscous soups bumpy with rice, cucumbers or baby squids; beef minced with vegetables and covered in raw onion hoops or stabbed by a skewer; purple eggs called balut that contain a two-week-old duck embryo you're supposed to slurp whole. MARISCOS LICENCIADO #2

Mariscos Licenciado #2—#1 is in the 909—sells Sinaloan seafood but lies landlocked in the same decaying commercial pocket JC Fandango calls paradise. Nevertheless, a coastal breeze flows through the simple eatery. It starts somewhere in Mazatlán, sweeps past the tiled counter where men in tejanas sit and curse at televised soccer matches, and cools giant vats of boiling octopus and shrimp with a salty Sinaloan soul. 1052 N. MATIKI ISLAND BARBEQUE

Whether tucked between two bread slices or served alongside rondures of rice and macaroni salad, the beef at Matiki Island Barbeque is among the most memorably delicious pieces of cow you'll ever chew: ruddy, soft, not burnt at all, a veritable luau on your palate. That beef and other entrées are the sole enticers here—no need for Polynesian bric-a-brac when the food is a slice of the island alongside two scoops of rice and one of macaroni salad. 3070 W. PICANTERÍA ARIQUEPEÑA EL MISTI

Little more than a long dining hall adorned with WPA-style farmer murals, El Misti prepares the diet of Arequipa, a city of about 750,000 acclaimed for its desiccated, hearty dishes and thunderously flavored drinks. El Misti offers Peruvian standards as well for the unadventurous: coconut-milk-based chupe soups, the buttery stir-fried chow meins known as tallarines and savory pollo a brasa. All good versions, really—but why would you eat anything else on the planet when the prospect of pig knuckles is but a request away? 3070 W. BREA'S BEST BURGERS

The perfect non-chain burger, a quarter-pound patty all gussied up with the Thousand Island dressing, the lettuce, the onions, the tomatoes and the sesame-seed bun. Brea's Best also has sandwiches, hot dogs, tacos, burritos and breakfast fare. You could even eat healthy by ordering an ostrich burger—but why would you? BUENA PARK

NANCY'S PUPUSERÍA RESTAURANT

Customers at Nancy's wait with patience, and so should you—as Sunday school taught, patience is a virtue, and its reward is the pupusa. Namesake owner Nancy Funes' namesake Salvadoran pupusas are grilled discs o' plenty, bubbling with slightly salty cheese and not too greasy, as they are in so many other county pupuserías. Her pupusas de calabasa, brimming with fresh zucchini bits within the pupusa's cheesy morass that don't compromise zucchini's natural, juicy snappiness, is a minor miracle—maybe not on the level of Fatima but at least Medjugorje. 8111 Knott Ave., Buena Park, (714) 995-2086. ¢

CORONA DEL MAR

GALLO'S ITALIAN DELI

The thirtysomething-year-old deli is little more than counters, chips and sodas—which is to say, it's the perfect beach shack restaurant, even if it's on PCH. Request the Gallo's combo; the server will no doubt reply (as he once did to me), “Are you sure about that?” When he grabs sausages and begins hacking off massive slices, you'll understand his skepticism—the sandwich is bigger than most house cats. 3900 E. ANGOTEI

Small and claustrophobic, but they clear all the red tape as far as being authentic. There's lots of off-the-menu shit: conch, tuna cheeks, abalone—you know their shit's good when they got abalone. 675 Paularino Ave., Costa Mesa, (714) 557-2696. $$

FRANK'S PHILADELPHIA

There are no frills at Frank's Philadelphia when it comes to their Philly cheesesteak: humongous loaf (even the small is ginormous), beef bits chopped into portions so teensy you can absorb them through your fingertips; grilled peppers that remain juicy and fleshy even after meeting cast iron, and the melted mozzarella pours into your innards like milk. 2244 Fairview Rd., Costa Mesa, (949) 722-8725. $

SANTOUKA RAMEN

Despite its chain ownership, Santouka's soup is stately, with cooks offering ramen from different regions: Tokyo (heavy with soy sauce, with a whisper of dried bonito flakes), the miso-flavored liquid pride of Hokkaido, and another style, shio ramen, simply flavored with salt. 665 Paularino Ave., Costa Mesa, (714) 434-1101. $

SCOTT'S SEAFOOD

The dictionary describes scallops as the puffy, powerful adductor muscles of free-swimming mollusks. KATIE MCGUIRE'S PIE N BAKE SHOPPE

Here are chicken pot pies worthy of Nebraska: small but filling, flaky but sturdy, a yellow crust the tone of moist earth. Inside the crust is bouncy breast meat mixed alongside pea, potato and carrot bits. Nourishing the bird and veggie chunks like amniotic fluid is the gravy, a sweet, gooey liquid that will scald you if you don't blow on it for a couple of minutes. 10121 Valley View St., Cypress, (714) 826-7437. $

BEACH CITIES PIZZA

There's sweet spaghetti, wonderful breadsticks and a terrifying garlic sauce with thin, crispy strands of garlic that will actually numb your lips. Khyber Bazaar carries 4,500 Bollywood videos, along with Pakistani dramas and Afghani movies. It also sells Hindi, Pakistani and Afghani music. CHICAGO HARV'S

Most every county hot-dog cart advertises Chicago dogs, but Harv's is among the few places that does it better than the South Side. They ship in bulky Vienna sausages directly from the Windy City, stuff 'em into a poppy-speckled bun next to dill pickle slivers, and squirt the mess with stinky-but-super quarts of relish and mustard that'll leave lips a yellow-green color as vibrant as a 1970s Notre Dame football uniform. 410 E. ROMAN CUCINA

There's nothing pretentious or nouveau about the service or cuisine, no-nonsense Italian fare based on three kinds of pasta: fettuccine, linguine and penne. DELICIAS DE MÉXICO

Delicias de México (Delights from Mexico) is one of the county's precious few neverías: ice cream shops that specialize in resolutely Mexican flavors such as velvety mango, smoky mamey, sour guanábana and many other tropical, luscious fruits. HANDAAN

A traditional turo-turo (buffet), Handaan rotates out various Filipino goodies—adobo, satays, and about five different offals. Bukhara—Indian for “strip mall”— is situated in, of all things, a Huntington Beach strip mall. It's an intimate and superb representation of its genre, featuring healthy food, an extensive menu and, most important, many vegetarian choices. THE CHICKEN CO.

BRITTA'S CAFÉ

Britta's is a quaint, European-style café where servers offer you individual pieces of bread (baguette or pumpernickel?) and a savory rustic tart isn't some old queen sashaying through a gay Parisian bistro but an appetizer you'll completely enjoy. DIHO BAKERY

The Japanese are the creators of nikuman, the world's cutest sandwich which consists of a candied, spongy flour wrapped around gingered meats and vegetables. At Diho Bakery, nikuman-type sandwiches are elevated to an art form on par with calligraphy. The taro, in particular, is a pleasant surprise—not your tiki party's dull, watery poi paste, but instead a jam waiting to be copyrighted by See's. 14130 Culver Dr., Ste. EL CHOLO CAFÉ

First served up by Rosa Bórquez in 1923 in LA's original El Cholo Café (her grandson Ron Salisbury owns the restaurant group these days), the place's green corn tamales are a Southern California dining institution. On bites two and three, you'll find oozing sharp Cheddar cheese and Ortega chiles, which combined compete against the sweet corn with a snappy alternative. 840 E. PAESANO'S

You probably slap together half of Paesano's menu at least once a week for dinner: sauce-drenched entrées such as mostaccioli, spaghetti and lasagna that aren't so much Old World as they are Hoboken. Brussels Bistro is the kind of place where you can linger, talk with the people at the next table, and then find yourself already gorged ordering dessert. Casa Olamendi's is the sort of place in which you ask for a balcony seat for a sunny lunch or come later and watch the sun sink into the sea over the two T's: tamales and tequila. Palace Bakery is the county's second shop to specialize in Persian desserts, a sweet-tooth tradition similar to Arabic pastries in their sumptuousness but also exhibiting bolder flavors. Palace's baklava is sweeter than what they hawk in Anaheim's Little Arabia—splashed with more rosewater and honey, the phyllo dough tougher and rolled around a dense almond filling so it resembles a miniature cigar. Every Filipino joint offers the same meals; Manila Food Mart differentiates itself by hawking various products, from such Filipino garb as handbags and barongs (an ornate, light long-sleeved shirt similar to the Caribbean guayabera) to a freezer stocked with ready-to-eat meals such as bags of plump, sugary longansina pork sausages. ALGERIA COCINA LATINA

The Spanish-styled brocheta vegetariana isn't like any bruschetta we're used to. The bread is replaced with corn tortillas, topped with skewers of grilled vegetables in a light sesame sauce on a pile of Peruvian corn, fresh-chopped tomatoes and tofu. BUBBA GUMP SHRIMP CO.

The inheritor to the dumb Forrest Gump franchise actually fries some good seafood—shrimp, steaks, fillets with stupid names. Guaranteed to please are the Shrimpin' Dippin' Broth, a half-pound of spicy steamed shrimp served with dippin' bread for dippin' and coleslaw, and Forrest's Shrimp Net Catch, a massive basket of beer-steamed shrimp served with garlic and Cajun sauces. GREEN FIELD CHURRASCARIA

The phrase “food coma” was invented for the visceral carnality that clogs your pores at Green Field Churrascaria, which specializes in the terrifying meat onslaught known as churrascaria, or Brazilian barbecue. Churrascaria is pricey, but here's what you get: all-you-can eat Brazilian sausage, tightly packed and burnt to nirvana, like a nonsweet Chinese sausage; a chicken thigh, good but perhaps too dry; and beef loin, best ever, rare but hot clear through. 5305 E. Home to the English pasty, a dish riddled with mystery meat and wrapped in a tasty enigma. LA MAISON GOURMET

Every Friday for the past couple of years, this charming shop on the edge of Lake Mission Viejo has opened its private lakeside patio for wine tastings. The events are a smash; reservations are required, limited to about 30 per session and best made at least two weeks in advance. But it's also a bona fide gourmand's treat, with wines from across the world available plus a diverse cheese-and-meat wheel for grubbing. 27772 Vista del Lago, Ste. NEWPORT BEACH

BISTRO LE CRILLON

A quaint, Provençal-themed restaurant named after the village in Provence from which chef Chantal Berton's family hails. The cassoulet c'est magnifique, a hearty mixture of flageolets blancs (white French beans), confit of duck and three types of sausage, is simmered and baked for days on end. CHARLIE'S CHILI

Perfect for kitschy late-night dining with booths covered in ancient nautical signs and models. The Wednesday night all-you-can-eat chili special is ideal: steaming bowls filled with a thick, sumptuous chili drowning in diced onions and cheese. 102 McFadden Pl., Newport Beach, (949) 675-7991. $

PESCADOU BISTRO

Despite its location—in a storefront across from Newport Beach City Hall—Pescadou manages to impart a south-of-France feel with vibrant colors and eclectic table settings. TACO ROSA

It's not just the wide swath of Mexico—Mexico City, Oaxaca, even the Yucatan—that makes Taco Rosa one of the few truly successful gourmet Mexican restaurants. Taco Rosa succeeds because its few tweaks are Mexican-based and surprising. Ask for the aguas frescas and instead of horchata, waiters will recommend a frosted, freshly squeezed cup of cantaloupe or melon—¡delicioso! 2632 San Miguel Dr., Newport Beach, (949) 720-0980. $$

ORANGE

EGG ROLLS, ETC.

Naming a restaurant Egg Rolls, Etc., implies that the eatery specializes in various versions of Asia's preferred fried snack. This recently opened Orange establishment, however, creates but one kind—lumpia, the Filipino type that's bulky enough to wield for bruising purposes. The “Etc.” portion of Egg Rolls' name is more accurate, referring to the turo-turo (“point-point”) cafeteria tradition of Filipino cuisine to which the restaurant adheres. 1710 W. EL PORTAL DE VERACRUZ

Most people pick their El Portal meal from a buffet that surprises hourly. Sometimes you'll find fried bananas sidling against pork ribs slathered in a citrusy green salsa spiked with smoky cactus strips. Or you can go veggie and load up on grilled jalapeños, cheese-sprinkled refried beans and moist rice. But no meal at El Portal is worth eating without at least one masa-based Veracruzan snack: potato-y garnachas, lightly fried picaditas or fluffy chicken tamales. 4530 E. SALAMAT MARKET N DELI

Salamat is more than just a takeout deli serving great kabobs, stews and soups. The tiny store stocks a surprising array of goods imported from Iran: traditional Persian cheeses and figs; oils, jams and spices; and Persian breads ranging from pita to lavash to the massive sangak, a 2-foot-long flatbread thing that looks like a miniature bed sheet—there's even something called Armenian cracker bread, which is wrapped in butcher paper but feels and weighs like a military-grade pretzel. 1718 N. MINI-GOURMET

The Mini-Gourmet is a Placentia strip-mall diner where adults wear T-shirts proclaiming allegiance for the football squad at nearby El Dorado High while sipping coffee alongside no-frill omelets. The Ortega omelet is all about the mild chili, ripe tomatoes and liquefied cheese awaiting its scraping up with toast. 1210 E. Yorba Linda Blvd., Placentia, (714) 524-1611. $

SAN CLEMENTE

MOLLY BLOOM'S IRISH BAR AND RESTAURANT

Molly Bloom's interior has the standard Irish pub features: low lighting, Guinness posters and bricks. Lots of bricks. Both bar and restaurant offer sizeable menus featuring traditional Irish dishes such as fish and chips, bangers, beans and mash (a surprisingly tasty combination of sausages, baked beans and mashed potatoes). 2391 S. SAN JUAN CAPISTRANO

SANTA ANA

50 FORKS

50 Forks, the student-run restaurant of the Art Institute of California's Orange County campus, is the final test for the school's culinary arts students before they can graduate with a bachelor's degree, the classroom where years of theory and strategies get flambéed and presented to salivating, discriminating eaters who grade by pats to the gut and big tips. It's also one hell of a restaurant, with great, inventive platters, and its more than affordable—probably the only place in the county where you can dine like Newport Beach at Santa Ana prices. 3601 W. FERDUSSI TASTE OF PERSIA

This Persian palace, replete with pictures and paintings of ancient Persia, makes their lamb shank just as it should be: stewed for so long the meat falls off the bone when you so much as look at it. La Nueva Reyna's ice cream is velvety, like a lover's tongue on yours—except for the wonderful chunks of fruit. This Wednesday-afternoon farmer's market is standard save for its bacon-wrapped hot dogs, the stuff of after-concert Los Angeles curbside vendor legend. Preparation is simple: Father grabs an all-beef hot dog and wraps it with strips of pale bacon as if it were gauze on an injured thigh. Son slaps the coiled wiener on the grill, where the bacon begins to fry. Sizzle. The fat of the bacon seeps into the hot dog, which plumps quickly, while the bacon burns until it's black and crispy. Cajun purists will howl that there are no outposts of this rapidly expanding chain actually in the Crescent City, so therefore the food cannot possibly pass muster—hell, they don't even got gator! The Tustin Japanese joint continues to be a county chowhound phenomenon more than a decade after its opening, one of the precious few Orange County restaurants with a daily past-midnight closing time and a 150-plus-item menu that necessitates hours-long pilgrimages just to dent it. Per the izaka-ya tradition, Honda-Ya is all about time and placement: different sections that provoke a different feel and warrant a different menu at different hours. Chicken, duck and pork—these are the sole listings on the Vietnamese/Chinese/English menu at Duong Son BBQ, a smokehouse between a jewelry store and skin-care center in Little Saigon's anarchic Cultural Court district. The pork features a ruddy, crisp skin; is nearly fat-free; and is roasted until it's as soft as a marshmallow. The steaks are cooked in a superheated gas flame to “seal in the juices,” as the publicity goes. They are. In a country where each state has its unique version of the curry-like mole, Oaxaca is king, and El Fortín offers four stunning varieties of the royal family. I won't even bother describing the house mole, as my tongue cannot possibly articulate this creation—only eat. 700 E. GYRO KING

It's a mighty gyro they spin at Gyro King: lamb and beef compressed into a hexagonal slab, twirled slowly on a spit so the meats meld into one another. When you order a gyro sandwich, a cook shaves lengths from this dense mass and lays them inside toasted pita bread alongside lettuce, tomatoes, onion and crumbles of feta cheese. PASTA CONNECTION

If you haven't dined at this Italian-Argentine chain, you're at least familiar with its logo—a picture of a howling toddler with spaghetti dripping from his head, an Orange County advertising icon as beloved as Mickey Mouse or the Spanky's guy.
