When Steve Dickus opened Pizza e Vino a few years ago on Rancho Santa Margarita Lake, I wondered how he would stay in business. His Neapolitan pizzas are the best in South County, but opening a high-end pizzeria in the middle of a recession in one of O.C.'s most remote locales seemed crazy (Ortica, Ecco or Mozza didn't exist here yet; nor did the craze for Naples-style pizza).
Over time the restaurant picked up steam. Wood-fired and smothered in a fruity San Marzano tomato sauce, these pizzas became the first in OC to earn certification from the Associazione Verace Pizza Napoletana, an international group that recognizes pizza makers whose product preserves the craft of Neapolitan pizza.
Now, Dickus plans to take his pizzas, and more, to another remote corner of the Orange: He's heading to Yorba Linda to open Pizzeria Solo.
The menu will feature a limited number of pizzas, but
an expanded menu of appetizers and small plates, including bone marrow
and risotto. Pizzeria Solo will
have a full bar, unlike PeV which only offers beer and wine.
Expect it to open in June in the former Mansion Ristorante space in Eastlake Village Center on Yorba Linda Boulevard.
