On The Line: Greg Daniels Of The Haven Collective, Part Two

Greg Daniels' Executive Chef and Partner title at haven collective (Haven Gastropub, taco asylum and Provisions Market) means he might be somewhere between Costa Mesa and Pasadena. Yet he still appreciates quality family time, something hoppy and the occasional social media update. His past work experience includes managing a place that may surprise you, but we understand how the change in venue shaped his views on running a business. So without further ado. . . .

And now, on to Part Two . . .

Do you have any skills that are non-food related?
I'm really good at drinking . . .does that count? But seriously, I enjoy writing. I've always thought that if I didn't become a Chef, I would have become a writer.

How has fatherhood changed your perspective?
I think that fatherhood has intensified my focus on great ingredients and knowing where my food comes from. It also drives me forward and motivates me to work harder because I know I have someone depending on me.

What were you up to five years ago?
That was one year before we opened Haven Gastropub in Old Towne Orange. I was managing Heat Ultra Lounge at that time– keeping very different hours, hanging with go-go girls and DJs. It was also the last time I sold non-craft beer to anyone.

What's your favorite childhood memory?
Traveling up the coast with my family. We tried to make it an annual trip, and my fondest memories are of eating sourdough bread and crab at Fisherman's Wharf.

When you're not working, what are you doing?
I try to give myself at least one day off a week to spend time with my wife, Abby, and daughter, Madeleine. We may end up at Disneyland, or, since it's been so hot lately, play around in the pool.

Last movie watched; how was it?
The last movie that I watched was probably either Finding Nemo or Cars. Madeleine rules our television. This is probably the 50th time I've seen those movies, and they get better every time!

You & I by Wilco.

Last thing you looked up online:
I was probably searching for more information on a beer or cheese we carry at Provisions. If it wasn't that, I was probably checking out what's happening on Facebook or Instagram.

What's next for the haven collective?
We're always looking for something new, but right now our focus is on building the brands we have.
