Why sorbet and gelato?
Because it's best when it's fresh, and I like to make it fresh. And there's no fat to hide the flavors. I really get to play around with ingredients.
Hardest lesson you've learned:
To keep focus and not get sidetracked by too-good-to-be-true adventures.
Who is Laura, and how did you two meet?
Laura is my wife. We met in Copenhagen Airport where we both worked part-time jobs in two different car rental places over 10 years ago.
Where did you grow up? If you're not from Orange County, what brought you here?
I grew up in upstate Copenhagen in Denmark in an area very similar to Orange County, actually. We opened N'iceCream in OC because we though an organic gelato joint was much needed in this beautiful part of California.
When you're not at work, how do you spend your leisure time?
My wife and I live in Venice Beach, so we spend a lot of time walking, running, skating down the boardwalk, and also enjoy hikes in the Santa Monica mountains. And then, of course, we binge TV shows.

When you use the internet, what's on your homepage?
It always takes me straight to www.ilovenicecream.com so I can check if the girls have uploaded the daily flavors.
What's your favorite childhood memory?
Playing with my friends in the forest surrounding our neighborhood.
Last movie watched; how was it?
The Wolf of Wall Street. It was AMAZING. I loved his energy, tenacity and his way of not giving up.
What were you up to five years ago?
I have always been an entrepreneur. Always played around with different businesses. Five years ago I did it back in Denmark.
What would you be doing if you weren't in this business?
I would be in real estate, flipping houses. I'm kind of addicted to the process of finding a location, being in construction and making it look pretty.
