No. 29: Calamari at Three Seventy Common

The fat fingers of paprika-dusted calamari are satisfying, but ironically, it's all the other stuff in the bowl that wows: the light aroma of roasted lemon; piquant, blistered shishito peppers; a blizzard of salty, melted parmesan; the concentrated zip of fried rosemary branches and sage leaves. The sauces are essential, but an afterthought to the flat-out deliciousness of the sage and shishitos, by far the best components on the plate.

In a world of lemon wedges and cocktail sauce, this one sets the bar high.
