Life on the Veg: Hue Style Noodle Soup at Brodard Chateau

A swankier spin-off of its Westminster counterpart, Brodard Chateau specializes in Asian fusion, but essentially Vietnamese cuisine. Despite what you may expect, this actually leads to some pretty great perks. For example, you don't have to put in any off menu vegetarian requests and rely on sheer faith that the chef respects your dietary preferences. At Brodard, you've got an upscale dining environment with a reasonable selection specially prepared vegetarian/vegan options.

One such (and especially scrumptious) option is the bún bò Huế chay, also referred to by its less intimidating English translation of “Hue” style vegetarian noodle soup.

The Hue style noodle soup is an unexpectedly sumptuous surprise. It isn't often that one finds wet noodle dishes cooked with vegetable broth outside of specialty restaurants. In addition to this, the recipe is standard so you're not going to experience any funky flavor dissonance that would most likely occur with an ingredient substitute.

This dish combines jumbo rice vermicelli, oyster mushrooms, slices of beef-style soy protein, and bits of chewy soy wrap in a spicy and painstakingly seasoned vegetable broth. At $8.95, the bowl is decently sized and big enough to quell your hunger without the addition of appetizers. Also a big plus: it's vegan friendly!

For the adventurous and culturally savvy, the Hue style noodle soup can be taken up a notch by adding the provided condiments–in this case: shredded cabbage, lettuce, bean sprouts, banana blossoms, Vietnamese coriander (rau rahm), and most importantly lime. The addition of these ingredients provides a freshness and extra layer of complexity to the dish's texture and the fresh lime juice goes especially well with the spiciness of the broth.



For the big eaters, try the vegetarian summer rolls. Brodard's spin on the traditional recipe is both innovative and delicious. The appetizer consists of fresh shredded lettuce, cucumber, mint, grilled asparagus, avocado, and sauteed eggplant all expertly wrapped in a single sheet of rice paper. The resulting flavor is rich and packs an amazing punch when dipped in the rice vinegar soy sauce. At $5.25, you get two decently sized pre-cut rolls and an extremely happy tummy.
