The Hue style noodle soup is an unexpectedly sumptuous surprise. It isn't often that one finds wet noodle dishes cooked with vegetable broth outside of specialty restaurants. In addition to this, the recipe is standard so you're not going to experience any funky flavor dissonance that would most likely occur with an ingredient substitute.
This dish combines jumbo rice vermicelli, oyster mushrooms, slices of beef-style soy protein, and bits of chewy soy wrap in a spicy and painstakingly seasoned vegetable broth. At $8.95, the bowl is decently sized and big enough to quell your hunger without the addition of appetizers. Also a big plus: it's vegan friendly!
For the big eaters, try the vegetarian summer rolls. Brodard's spin on the traditional recipe is both innovative and delicious. The appetizer consists of fresh shredded lettuce, cucumber, mint, grilled asparagus, avocado, and sauteed eggplant all expertly wrapped in a single sheet of rice paper. The resulting flavor is rich and packs an amazing punch when dipped in the rice vinegar soy sauce. At $5.25, you get two decently sized pre-cut rolls and an extremely happy tummy.
