Hatch Announces Tustin Opening Date

Restaurant openings are tricky things. All it takes is one disapproved inspection to prevent a business from starting. After the number of concepts Leonard Chan has launched, we are confident that what's quoted to us is relatively accurate.

This time around, Chan is focused on Union Market, located inside The District at Tustin Legacy. True to its name, the upcoming Hatch allows diners to conjure up a playful menu of small bites.

At the core of Hatch's menu is a selection of sliders sold in trios. Pork, beef, duck and other proteins (even multiple bun options such as a mac and cheese or brioche one) allow for endless combinations. Some of our favorites include roasted duck on a Chinese steamed bun and a grilled Manchego, honey and basil on a Hawaiian roll. Choose between seasoned fries, rings and wings as a hearty side. Or go the salad route for something a bit healthier. Andrew Singh (current chef for both Iron Press and Blind Rabbit) and Steve Takashi will helm the Tustin kitchen.

Starting August 1, one can also expect a modern tiki bar to keep you company. A total of 64 dining room and patio seats for thirsty and hungry patrons, we look forward to dining al fresco after a rough day. All that we need now is for Hatch to open up already.
