Best Use of Tofu

This hippy-attracting, peace-loving shrine of a cubbyhole off PCH in Laguna has enticed eaters for years. And though Taco Loco's fajitas, taco bar and mile-long list of nacho variations are spicy bliss, we can't help but order the same thing every time: the blackened mushroom and tofu burger. On a toasty bun brushed with mustard and ketchup (or a heaping mound of guacamole), it piles on the tofu squares and mushroom slices, cooked with a fiery mix of Cajun spices. It's meaty, satiating, peppery—and totally validates ordering a veggie burger at a Mexican restaurant.
