It’s often said that because of the complexity of how its ingredients work together that no two bowls of pho made from the same kitchen will ever taste the same. So why not opt for a place where every bowl may taste a little different, but each is authentic, savory and memorable? That would be this venerable institution, one of the first pho restaurants in Orange County, the first region of the world outside Vietnam where the ongoing worldwide conquest of pho began taking hold. The décor tends toward the shabby, but it’s always packed, the servings plentiful, and those who swear by these things vow that the oxtail pho—when available—is the best version of this highly modifiable dish they have ever slurped.
