All the food at this shiny industrial brewhouse is inspired by fermented veggies made on the premises. Kimchi, sweet pickles, or jalapeño and carrot escabeche are always available, adding tang, crunch and heat to sandwiches, quesadillas and mountaineer rolls—a West Virginia staple reworked here with a sweet dough stuffed with pepperoni, salami, cheese, and a jalapeño or habanero. The kitchen is always experimenting with these alkaline foodstuffs, said to combat the overacidification of our insides, so be sure to ask for the fermented special of the day as you sample your flight where small planes once took off and soared away.
