7 Moles for Día de los Muertos at Gabbi's Mexican Kitchen in Orange

Last week, Dave told you about five foods to commemorate the Dia del los Muertos, including meats prepared en mole. Now comes news that for each day until the Day of the Dead, November 2,  Gabbi's Mexican Kitchen will feature a dish with one of the seven moles of Oaxaca.

Only a handful of OC restaurants prepare authentic moles oaxaqueños and mole poblano on a daily basis, and even then you'll only come across mole negro, colorado and the occasional amarillo or estofado. There are very few opportunities to taste the more obscure varieties like the deep brick-red mancha manteles, and the black chichilo.
