The Blind Pig To Open In RSM By The End Of The Month

A “Blind Pig” is another name for a speakeasy, but it sure makes for a funny logo, apt for T-shirts which are, by the way, already printed up, waiting to be sold. And the new RSM restaurant which takes the name and is located at the edge of Rancho Santa Margarita Lake, isn't even open yet.

When it does at the end of the month, it's supposed to be a “throwback” to “speakeasy days”, according to the marketing material a PR person sent us. It also promises that its chef Josh Han, who was previously the sous chef at Broadway by Amar Santana, will feature smoked chicken liver mousse and pork jowls, all served with what has been described “a little swine dining twist.” Broadway's Gabrielle Dion will be mixing drinks.

What that “swine dining” twist is, I don't know. I suppose we will have to find out together when their website puts up a menu. In the meantime, there are pictures of the progress being made at the restaurant on their Facebook page.
