Recipe of the Week: Guacamole (In Honor of National Guac Day!)


Yes, today really is National Guacamole Day!

And where better to get an authentic recipe for the dip than the California Avocado Commission?

The voiceover for the atmospheric video clip on the website's home page actually ends with the clichNd phrase: “Insist on California avocados.”

This version is so authentic, in fact, it's even called Guacamole AutNntico!

And, even better, it's over and done with in ten minutes (bar the eating, which is bound to take even less time).

The following recipe serves eight.


Ingredients:

4 ripe, fresh California avocados, peeled and seeded
½ tsp ground cumin
1 ripe, medium Roma tomato, seeded and diced
½ cup minced sweet white onion
2 serrano chiles, seeded and minced
½ cup cilantro leaves, chopped
4 tbsp fresh lime juice
hot pepper sauce
sea salt, to taste
white pepper, to taste


Directions:

Cut the avocado into large chunks and mash coarsely in a large bowl
with a fork. Add the remaining ingredients and blend gently; leaving
some small chunks is fine. Taste and adjust the seasoning with more
pepper sauce, salt and pepper if desired.
