No. 93, White Board Specials at Taco Adobe

Hey, kids: guess what time is it? It's time to restart that Long March known as 100 Favorite Dishes (INSERT YEAR). YEAH!!! Hey, don't ding us for listicles: Weekly DataLab studies show ustedes love this gimmick, launched in honor of our coming Best Of issue.

Besides, it is rather fun to do this for us Forkers–an opportunity to highlight dishes from restaurants we'll never full review, or secrets from old standbys. Anyhoo, let the march begin…

It's great to see Patricio Dillón and his Taco Adobe succeed after all these years, from his original spot off Main Street in SanTana to his second location in Orange, to him selling the original place to an asshole who summarily ran the business into the ground to his Taco Adobe in Orange, which is packed for lunch and dinner most days. We've written about him many times before, from the tacos to secret burritos–but never about the white board.

Every morning, Dillón wipes clean the white board near the entrance and puts the day's specials, which he'll pick up and place in front of people just to give them more options. Some of them are standards at this point–salmon fajitas, San Felipe-style tacos–but every once in a while, Dillón will pull a surprise. Take the above picture: enchiladas Sonoritas, essentially a surf-and-turf with plump shrimp and spicy chorizo stuffed inside the tortilla. The sauce could be better, but Dillón is a master with meat–and besides, the only sauce you need here is his secret habanero sauce, which is free upon request and will scorch you in the most fulfilling way since the sun poolside at Palm Springs.
