No. 62, Sonoran Dog at Rubalcava's



Roland Rubalcava has been doing great meals over at his family's market in Placentia, playing around with Mexican favorites while ensuring they do what Mexican food does best: comfort you like an abuelita while enticing you for more like a mujer from Los Altos de Jalisco. It's all great, but what remains his crowning achievement (so far…) is his mighty take on a Sonora dog.

Far too many places think a bacon-wrapped hot dog is just an excuse to wrap bacon around a hot dog, grill it for too long, then bury the charred results under a mountain of grilled shit. Rubalcava knows that the original Sonora dog, while definitely a flavor overload, is also a thing of dexterity, something that touches all the different flavors on your palate, with each ingredient playing a specific role. His version starts with an excavated torta (not a hot dog bun), in which he snugly places a wiener wrapped with cooked-just-right bacon. Then comes the toppings–onions, yes, but also tomato, some avocado, bacon bits, mayo, mustard, ketchup and a flurry of cotija that melts into a wonderful layer of umami on your tongue–best Sonoran dog in OC, by far.
