No. 32: Mac 'n' Cheese at Chapter One: The Modern Local



Ladies and germs: it's okay to eat at Chapter One: The Modern Local again.

Us Forkers had an unofficial ban against the place because one of its former partners trashed Mexican SanTana during a city council meeting last year. A terrible disappointment, because we did love Chapter One–Edwin gave it love, we named it the Best New Restaurant last year, and so forth. But we don't support bigots, plain and simple.

Thankfully, that pendejo is now gone, so eating at Chapter One is halal again. And I could finally return to the glory that is their mac 'n' cheese.

Mac 'n' cheese is the “street” taco of the gastropub world, a cliché that even at its heights, never amounts to much. But Chapter One has always been the exception–what else can you say to a glop of love featuring white cheddar and fontina cheese, bacon chunks that explode like chicharrones, and finished off with caramelized onion relish, toasted panko, and truffle oil? What's great about this dish is that it evolves as you eat it–from the initial crunch of the panko to the silken mac 'n' cheese part as it transitions to the smokiness of the onion relish, the umami of the bacon and truffle oil, then ends with that crunch.

All is forgiven, Chapter One. Now, NEED MORE MAC 'N' CHEESE…
