Am glad to say that my watering hole, Memphis at the Santora, has succeeded enough that they're now open for dinner on Tuesday nights. Better yet: they've elected to use this night to allow people to build their own burgers! Remember: Memphis knows meat the way the Catholic Church knows how to cover up and apologize for pedophiles, so you know this is good!

It's an obvious rip-off of the Counter, but who cares? Memphis doesn't offer ingredients that owner-chef Diego Velasco hasn't already mastered, nor do they offer gimmicks, so feel free to mix and match. I did, and have, and will continue to do so every Tuesday I can. See you there!
