Ex-Chef From The Cellar To Open Restaurant in Anaheim


David Kesler spent almost a decade inside The Cellar in Fullerton as its executive chef. Now he's on his own and on the verge of opening Bistro Bleu, a French restaurant he says will be “without the high prices, sub-par food, and
pompous attitudes.”

The space he took over is from the recently shuttered Sal's Bit of Italy in Anaheim. He and his wife Pam have been renovating it since they got hold of the keys a month ago.

“We took over the day after it
closed and have been going at demo/re-construct full time, non-stop
since then…even on Christmas Eve and Christmas Day!” they wrote on their Facebook wall, in which he has also uploaded videos of the work.

They've already put up a website with their planned menu.
And it does seem to prove his intent to offer typically expensive
French cuisine at “economy-busting prices.” Listed is a $9 for his “Burger Bleu”
to $16 for steak frites. A $10 cheese plate is called “Homage to
Fromage.”

It may take a few more weeks, if not months, before Bistro Bleu opens, but check back here for updates.
