Clay Oven has played host to a few pop-up restaurants recently, usually with cutesy names (“Play Oven” for the Jason Quinn pop-up), but tonight's “Clay Birds” seems like an obvious match: the ladies from Seabirds will be teaming up with Chef Geeta Bansal to cook two seatings' worth of Indian-inspired vegan fare.

We see the look on your face, and you can stop grimacing. South Asians
in general and Indians in particular are unrivalled in the world in
their creativity with vegetables, a necessity in a place where a vast
portion of the populace disdains meat for religious or spiritual
reasons. So varied and amazing are the vegetarian dishes of India that I
can count on one hand the number of time I've ordered meat for myself
in an Indian restaurant.
