Yes, I'm as puzzled as you are. Chef Hung, the Taiwanese beef noodle soup peddler that opened in August at Diamond Jamboree in Irvine, just announced their official debut will be today, Monday, October 24th.
I guess this means the past two months have been just a practice run? Does that invalidate the middling online reviews that has plagued the restaurant since then?
If you're like me, and have not tried it, perhaps today would be a good day to do so, if not just for the one-day-only 20% off all items.

The festivities will begin at 11:45 a.m. today, Monday, October 24, 2011 and will include a lion dance performance, ribbon cutting,
sign unveiling, and a video crew to record it all. The restaurant
itself will open to the
public at 12:30 p.m.
