Besides, it is rather fun to do this for us Forkers--an opportunity to highlight dishes from restaurants we'll never fully review, or secrets from old standbys. Anyhoo, let the march begin...
They call the sandwich "The Fireball", so expect your whole mouth to throb. Your first clue it would be sweat-inducing is the inclusion of Calabrese salami, which one should never underestimate. Calabria, after all, is the Italian region as synonymous for its spicy food as Szechuan is to China.
But it's not just the salami. There's also the wad of spicy cured capicolla that harbors a low-frequency hotness of its own. This one gets you at the back of the throat. And then there's the vinegar shrill of hot mix (a sort of relish made with pickled carrots) and, last but not least, a not-insignificant amount of whole pepperoncinis.
The hotness in this sandwich layered itself one on top of the other, building up the more you eat, and will require you to take a few cooling swigs of soda somewhere in between as a reprieve. But even if it weren't tongue-numbing, it'd still be a great sandwich. Cortina's sandwiches are all good to great, held together by a wonderful crackle-crusted loaf that could elevate even Oscar Meyer bologna.
