100 Favorite Dishes #23: Lobster Elote at Dos Chinos


Hop Phan, hot damn! Leave it to Phan and the crew at Dos Chinos to create a majestic marriage of Asian and Mexican cuisine time after time. Their latest offering has taken Instagram by storm: Lobster Elote. The beautiful mess of a dish is undoubtedly deserving of the buzz, the wait (they cook it to order) and even the $27.75 price tag. 

You get a whole, live Maine lobster, halved and covered with copious roasted corn kernels and Monterey cheese shamelessly melted over the shells. And then there's the seasonings—oh God, the seasonings: cayenne, cilantro, fried shallots, blackened scallions, and garlic aioli. It has a kick, but not spicy.

Dig through the mountain of roasted elote, savor the melted Monterey and finally you'll arrive at the pearl of this meal: that sweet, sweet lobster meat. It has that mild sweetness and snap that you can only get from fresh lobster.  Dig it out from the shell and use it to sop up the juices and oils at the bottom of the foil bowl it's served in. Go on, don't be shy. 

Don't stop at the lobster tail either—there's plenty of meat left in this sea-beast, including the brain candy. Beyond the lobster itself, the seasonings and oil that's left in the shell are so good, it took all of our will-power not to pick up the shell and lick out the residual juices. Ah, who are we kidding? We have no shame—you know we licked the sucker clean. This ain't the Ritz, you know?

You can find the lobster elote at Dos Chino's location within 4th Street Market in SanTana daily, while supplies last. It is sometimes available on their food truck but check their social media for announcements.
