The single biggest proof that Mexico's cuisine is not some heterogeneous amalgamation of meats wrapped in tortillas and sauced (and cheesed, if you're from the breakaway part of Mexico known as Texas) is the existence of Yucatán food. It's got Caribbean soul, a love for intensely hot chile sauces, and a need to use more vinegar than the other 31 states and territories put together.
One of the only places to get Yucatecan food in Orange County isn't even a restaurant; it's a bakery. Conde Cakes has a menu of snacks from the Yucatán, and the queen of the snacks is the panucho (no, not the panocha–clean that dirty mind of yours). A masa cake stuffed with wonderful black beans redolent of bay, onions and cilantro, then with turkey (or chicken) cooked in recado colorado and topped with lettuce, tomatoes and pungent, acidic marinated red onions that cut right through the richness. One's a snack; two's a meal. They're amazing.
