Resurgence of grass-roots recipes with modern twists, more family-style diners.

Fast food.

Weirdest thing you've ever eaten:

Barbequed iguana.

You're making an omelet. What's in it?

Eggs, bacon, green onion, tomato, aged Vermont cheddar.

You're at the market. What do you buy two of?

Green apples.

Weirdest customer request:

A guest needed a gluten, lactose & sugar free dinner. Not weird I guess, but extremely diffcult.

Favorite OC restaurant(s) other than your own:

Spark Woodfire Grill in Huntington Beach.

Hardest lesson you've learned:

Grace under fire, remain composed despite chaotic surroundings/situations.

What would the last meal on Earth be?

Beef stroganoff, lobster, artichokes & fried chicken & waffles.

Japanese: There is pride in the culture's ancestry and traditions.
