Picking a fried potato to go with your burger is a momentous decision. Do you want to go with a classic American fast food french fry, long perfected by the Deez? Or maybe a steak fry that'll draw comparisons to Red Robin or (in our wonderful county) Mick's? Hell, you could even do wedges or shoe string.
But no, when Quinn and company opened Wagyu Chuck, their burger outpost in the 4th Street Market, they decided to eschew traditional potato knowledge and debut their own crunchy variation: the fried torn baked potatoes and man are they good.
Twice cooked, the exterior of the potatoes are near desiccated levels of crunchy while the interior remains fluffy. Because the potatoes are torn and irregular, you get even more variation in texture with some bits and pieces extra crispy and others creamy and velvety. Not to mention the steak fry-esque actual potato flavor thanks to the heftiness of the torn potatoes.
Now if I could just get these everywhere that decides to do shoestrings..
