Every year I tell myself that I'm not going to the Taste of Newport. I
never care about the musical acts, and $25 just to get in the gate to
pay for food is an astoundingly poor value. Every year, I swear I'm
going to give it up, and every year, right around this time, I get a mental whiff of the defining scent of the Taste of Newport: Sabatino's heavenly pork sausage, grilling slowly on an enormous, charcoal-filled brazier.

I say this as a proud and loyal son of New Jersey, someone for whom great Italian sausage is a birthright: Sabatino's is the best fresh pork Italian sausage in the world. Period. I don't know how they do it, since it defies all laws and rules of sausagery: it doesn't contain any pork fat. The folks at Sabatino's say the juiciness is made up with fresh goat cheese, Sabatino Ognibene's 19th-century recipe brought over from Sicily; I prefer to think of it as largesse given to us puny humans by divine Providence, manna in pork form.

It doesn't matter how you eat it. You can get it in any number of dishes at Sabatino's Restaurant in the Lido shipyard, or you can do as I do and buy it by the coil to take home. It'll come with instructions, which can be summarized as follows: don't pierce the sausage, don't grill it over high heat, and for God's sake don't cut it until it's cooked. Buy a loaf of crusty bread from Claro's, cook off some peppers and onions, and whimper as the aroma of the grilling sausage permeates your entire being.
