Electric City Butcher works with some of the best ranchers in California to offer nose-to-tail, sustainably prepared, hand-trimmed cuts. It features beef, lamb, pork, duck, chicken and even rabbit, as well as handmade sausages and charcuterie. “We will cut to order and deliver a fresh product to each guest,” says owner Michael Puglisi, who can be seen daily hustling alongside his all-male crew in an operating theater of a shop (it's a glass-encased corner inside Alta Baja Market, which is inside the 4th Street Marketplace).
