OC Weekly: What's your favorite OC restaurant(s) other than your own?

Ronnie Arnold: Café Mimosa in San Clemente.

OCW: What's the hardest lesson you've learned?

RA: That people are unpredictable.

OCW: Who's your hero, culinary or otherwise?

RA: Tony Iommi. Here is a guy that lost two of his fingers in an accident and overcame the tragedy, later to become one of the most influential guitarists of all time.

OCW: What cuisine that you are unfamiliar with would you want to learn more about and why?

RA: Hawaiian cuisine, because of their use of local ingredients.

OCW: Why street fare?

RA: It gives me a chance to use my diverse culinary background.

OCW: What's your favorite street food in OC (loncheras, etc.)?

RA: The corn dogs at The Little Red Wagon at Disneyland.

OCW: Have you tried any of the fancy new food trucks?

RA: No.

OCW: Are you planning on attending the OC Foodie Fest at the end of August?

RA: Yes.

OCW: If you could offer a single piece of advice to people visiting the Anaheim Resort, what would it be?

RA: Stay and watch the Disneyland fireworks at our Palapa Bar.

OCW: If you could invite any chef into your kitchen as a chef de cuisine for a day, whom would it be?

RA: Wayne Nish [owner of Privé in Singapore and a legendary New York chef with a bent for reinventing restaurants in no time at all].

OCW: What do you hope for your business in five years?

RA: I hope that we acquire locations in tropical places with white sandy beaches.

OCW: What about in ten years?

RA: To be a global contender in the hotel industry.
