Chef Juan Carlos reminds us that cooking comes from more than just schooling. It's a passion, a desire to be in the kitchen. While he might not have a lot of free time, his family values and dedication to his craft are all that matters.

When you're not in the kitchen, what are you doing in your free time? I spend as much time as possible with my family, especially my daughter. I also like to run and ride my bike. Where did you grow up? San Jose Iturbide, Guanajuato, Mexico.
What's your favorite childhood memory? Playing soccer in the street. Hardest lesson you learned. I wasn't able to be with my father when he needed me most.
Do you have any skills that do not involve food? I like auto mechanics, especially with classic cars. I studied only through junior high. I had no idea about cooking, and now it's my passion. Last thing you looked up online. I always look up whatever fascinates me about cooking.
What would you be doing if you weren't in the industry? Probably an apartment building manager. I used to do that. Is there anything you'd like readers to know about your restaurant? Experience the best of one of Southern California's most exquisite restaurants!
