On the Line: David Man of Palm Terrace and Lounge, Part Two

While not a luxe lonchera, Palm Terrace now has a catering truck, ready to serve parties of five to 500 wherever they can park it (most recently at the OC Fairgrounds). His mom's infamous cooking makes another appearance in this segment as well, but so does Yoda. It'll make more sense once you peruse.

When you're not in the kitchen cooking, what are you doing?
Spending my spare time with my young family or trying to get out on the golf course. Locally, I've been to Oak Creek. [Island Hotel operates the food service there.]

Last song playing on your radio/smart phone/iPod:
I think it was Adele singing "Someone Like You," or was it Elvis Costello's "Doll Revolution"?

Where did you grow up?

I was born in Los Angeles and raised in Fullerton.

Where was the last place you vacationed?
I can't remember the last time I was on vacation. But a few years ago, we visited my brother-in-law in West Virginia, and I got to play a lot of golf. We were out there for about two weeks, enjoying family, sports and total relaxation.

Hardest lesson you've learned:
Not to be overconfident and to always know that opinions are opinions, and everyone has them.

What's your favorite childhood memory?
Spending time in Hawaii with my family. My dad's from Oahu, and we would spend a lot of time on Honolulu. Also, holiday family gatherings at my grandparents' house.

Favorite Halloween costume:
My mother is skilled at sewing, and she would make all our childhood costumes. One year, she made me a terrific, green dragon costume with a huge, stuffed tail. I think we still have it packed away somewhere. My other favorite was a Yoda costume.

Favorite holiday:
New Year's Day because it is an important holiday for my mom. She cooks all day long to create a traditional Japanese meal, which signifies good luck and a long life. On New Year's Eve, I'll have soba noodles when I get off work. In the morning, I'll have ozoni soup and eat black beans.

What is your ethnic background?
I am half Japanese, half Chinese. I am third-and-a-half-generation American.

Last movie watched:
Safe House was a very good entertaining movie that kept me riveted.

Do you have any skills that are non-food-related?
I think I am a handyman at home, trying to fix all sorts of things: the dishwasher, washing machine, etc. Things that YouTube can teach you.

What would you be doing if you weren't in this business?
I would be a stock broker or a dentist.
