We confirmed yesterday that Chris is rolling out an updated dinner menu this weekend. Next weekend, it's the revised brunch. The wheels are constantly turning at The Corner, but it's also a place to unwind and try a specialty cocktail (their strawberry colada served in a Mason jar is refreshing). Bacon Wrapped Dates Stuffed with Blue Cheese and Balsamic Syrup
5 dates, seeded
3 strips thick cut bacon, cut in half and at room temperature
1/4 cup blue cheese (pick your favorite)
1 cup balsamic vinegar
1 teaspoon cornstarch
1 teaspoon water
1 tablespoon parsley, chopped fine
Stuff each date with as much blue cheese as you can and close it back up.
Roll each date as tight as possible and wrap with bacon.
Set in refrigerator for at least 4 hours. We want the bacon fat to harden again, this way it won't unravel and you won't need picks.
Turn grill (or broiler or oven) on high.
Bring vinegar to boil and reduce by half. Mix cornstarch and water, then pour into boiling vinegar. Once the vinegar returns to boil, remove from heat and cool in refrigerator.

Place chilled dates on grill. Cook just enough to get some char, then place in oven or under broiler til bacon is crisp and cheese is melted, about 10 minutes.
Spool balsamic on bottom of plate, place dates down the center, and sprinkle with parsley.
