A mobile pizza oven is an intriguing idea. There's no reason a wood-burning oven couldn't be toted around the county, and that's exactly what TJ's Woodfire Pizza does–they have a brick oven mounted on a trailer; they bring wood and make pizza outdoors.
The crust was beautiful, charred in just the right number of places, chewy and bready at once. The fresh mozzarella is well-drained and not gooey; the basil adds the required herbal, anise-y taste, and the tomatoes are tender. A hit of salt (pinched from another truck) was all that was needed.
The issue is that the pizza goes downhill quickly as it cools–you pretty much have to hang out and stuff it into your mouth as soon as it comes out.
