No. 55, Congee at Capital Seafood

Hey, kids: guess what time is it? It's time to restart that Long March known as 100 Favorite Dishes (INSERT YEAR). YEAH!!!

Hey, don't ding us for listicles: Weekly DataLab studies show ustedes love this gimmick, launched in honor of our coming Best Of issue. Besides, it is rather fun to do this for us Forkers–an opportunity to highlight dishes from restaurants we'll never fully review, or secrets from old standbys. Anyhoo, let the march begin…

Jook. Porridge. Arroz caldo. Congee. Gruel. It takes on many names. A roommate once made it by accident when he put too much water in the rice cooker and we made fun of him; but when it's intentional, congee has bits of meat, fine juilennes of ginger, a sprinkle of scallions and is best served when you yearn for the simple and the comforting.

And oh how I want it now, especially the one Capital Seafood at the Irvine Spectrum serves in a big honking bowl if you ask for it during dim sum. I ladled a bowl's worth, gulped it down, felt the all-enveloping sensation of the starchy goop warm me for the inside out. I promptly spun the lazy Susan back around for a second helping and a third.

If there's a secret ingredient, it has to be that ginger. It transforms what's potentially bland and boring into a substance worthy of a better name than gruel.
