Okay, so I just reviewed this SanTana restaurant this week, and I gave a major plug to the tlacoyos--but they're so good that they deserve extra love. Just look at that beaut!
This is what I wrote in this week's review, where the Hidalgo-style barbacoa and mixiote is king:

Start with a tlacoyo, a cross between a gordita and a huarache, except it's stuffed with garbanzo beans and topped with crema, cotija cheese and so much cilantro it looks like a sandwich.

I forgot to mention the salsa, either a fleshy tomatillo rendition or the one above, smoky due to the chile de árbol used. I forgot to praise the earthiness of the garbanzo's, the masa's fresh tang. Hell, I forgot to give a shout-out to the tlacoyo itself, found only in the county's chilango and hidalguense restaurants, one of the ur-meals of Mexico alongside the tamale and mixiote. In short, this is THE regional Mexican restaurant to visit in Orange County right now--and you begin with a tlacoyo.
