When folks ask us where our favorite place is for breakfast, we fail to mention Bruxie. Why? Partially because we forget (we're only looking young). It's not like they're notorious for only the most important meal. But we're glad that we do, because one of our favorite bites is served on the weekends to sell-out crowds.
After checking out the Orange Farmers' Market one morning, we strolled over to the bold fold for a meal. Our mind was set on green eggs and ham for their addictive arugula pesto, when our gaze landed on the specials board. Normally it's the usual tuna, salad and seasonal fruit selections. On this particular visit, however, it was an eye-opener.

The hash incorporates leftovers from both their sliced prosciutto and pastrami waffles. Slicing those deli meats fresh means they have end cuts that are otherwise thrown away, but who wastes perfectly good pastrami? Those pieces are saved during the week, and this accumulation is chopped up for service on the weekends. They add diced potato, top with a fried egg, melt some Gruyere and tuck the precious cargo into their signature waffle.
Our first bite savors the bits of meat cooked down to an almost crispy consistency, tasting better than any bacon strip or sausage link. Breakfast hash and eggs is our to-go, go-to meal that's second to none. Knowing we got the last serving that day only made things sweeter savorier. Meat, cheese, waffle. We'd spend every weekend here if we could roll out of bed.
