No. 2: Russian Cream at Delius Restaurant

A
dessert for No. 2? Yes, during a meal that included a marvelous
pork-belly appetizer and one of the better pan-roasted, crisp-skinned
salmon steaks I've had the pleasure of eating, this simple dessert
parfait made of a few simple ingredients (cream, sugar, gelatin, sour
cream) was still the highlight of dinner at Delius in Signal Hill.

As with all things great, it came out of nowhere. I just happened to see it on one of those Rolodex-type menus with the drink specials. I ordered it not knowing that it would floor me and have me gabbing incessantly about it for the next two days.

When I slurped my first wiggling spoonful, it felt like I was having something new but, at the same time, familiar. It's soothing coolness and milky sweetness was not unlike panna cotta, but behind this was an immutable tang of sour cream that made it a bona fide dessert epiphany.

Russian cream is not a newfangled creation. It has been around probably just as long as panna cotta. While its Italian cousin enjoys the culinary world's attention, Russian cream has quietly existed, passed around as a recipe shared among friends. But if there's a rendition that can bring it to the limelight, it's this one.
