Joshua Miller of 320 Main, Part One

People come to 320 Main in Seal Beach to sip the stiff drinks owner Jason Schiffer mixes and chomp the steaks that Chef Joshua Miller sears. We wish we could do a profile on both; but for this feature, Chef Miller gets the stage as he answers our silly questionnaire.

Short ribs because of their versatility.

Chinese parsley (cilantro).

My maternal grandfather. I'd like to have shown him that I inherited some of his culinary talents.

I want to be an integral part of helping my mom start her own bakery/cafe.

When I attained my very first executive chef position.
