This time around, Chan is focused on Union Market, located inside The District at Tustin Legacy. True to its name, the upcoming Hatch allows diners to conjure up a playful menu of small bites.
At the core of Hatch's menu is a selection of sliders sold in trios. Pork, beef, duck and other proteins (even multiple bun options such as a mac and cheese or brioche one) allow for endless combinations. Some of our favorites include roasted duck on a Chinese steamed bun and a grilled Manchego, honey and basil on a Hawaiian roll. Choose between seasoned fries, rings and wings as a hearty side.
Or go the salad route for something a bit healthier. Andrew Singh (current chef for both Iron Press and Blind Rabbit) and Steve Takashi will helm the Tustin kitchen.
Starting August 1, one can also expect a modern tiki bar to keep you company. A total of 64 dining room and patio seats for thirsty and hungry patrons, we look forward to dining al fresco after a rough day. All that we need now is for Hatch to open up already.
