Every day but Tuesday, people line up at lunch for tortas ahogadas from Los Primos' lonchera that parks on Fifth Street in Santa Ana's Artesia Pilar neighborhood, a dusty, run-down area that also boasts Sarinana's Tamale Factory. Most people order the standard torta ahogada, a carnitas sandwich with onions on a crusty, salty, deliberately stale roll that's woken up by lashings of tomato and chile de árbol sauce.

The sandwich, though, isn't the only thing you can have drowned in sauce; there are fried potato tacos there, and they respond even better to the chile treatment than the sandwiches. Just order tacos dorados ahogados (a mouthful in more than one way), and if you're truly not afraid of the aftereffects of capsaicin, give the order as, “Bien ahogada–¡atácale!

Then make sure you have money and room in your stomach for a serving of jericalla, the creamy, flan-like dessert from Mami Guadalajara.
