60. Tonkotsu Spicy Ramen at Ramen Yamadaya

Take a seat in Costa Mesa's Ramen Yamadaya and you'll understand why there's always people eating ramen in here even when the weather's muggy. The people sitting beside you will likely be hunched over their bowls, slurping noodles into their mouths as a server brings plates of crispy chicken karaage. This is clearly a spiritual experience for them, just like the ramen gods intended.

For those who like spicy foods, the Tonkotsu Spicy Ramen could be your gateway into greater ramen devotion. If you're wondering why, we'll start with the broth. Pork bones are boiled for over twenty hours, where the first ten breaks the bones into flakes and the next ten allows the broth to solidify into its final complex and rich form. Tan in color and cloudy, it soon turns bright red when mixed with the provided blob of red chili, adding an extra kick to the chasu, half-boiled egg, seaweed, bamboo shoots, and tiny noodles. Your first few slurps will result in forehead sweat and red cheeks--the first signs of having an intimate connection with your bowl.
