One of Arthur Gonzalez's best dishes at Panxa Cocina is his so-called NM Style Enchiladas, a dish that brings Long Beach closer to the Holy Land of fry bread and Hatch chiles and Breaking Bad. It's a stellar cast-iron platter of meat, cheese, sauce and corn tortillas draped with a choice of either a red or green chile sauce, or both together in a third saucing option aptly called "Christmas."
It will taste as soft and comforting as the homiest lasagna, except with the special kind of magic that only happens when the vegetal perkiness of green chile combines with the creaminess of melting cheese in your mouth.
You can add an egg on top as I did, but you don't need it. It's a perfect dish just as it is if you opted for the already-rich short rib as filling, which is the same meat (along with either chicken or pork) the kitchen stuffs into fry bread for Panxa's Navajo tacos. The tacos are also good, by the way, but they're the Jessie Pinkman to the enchilada's Heisenberg.
