Summer nights at Joe's Italian Ice are like a perfectly Valencia-filtered Instagram photo. At the Anaheim location, the white dessert shop glows against the gray and purple sky during sunset. Neighboring buildings adorn the tiny but populated lot with slightly curved palm trees. When people are no longer in line (there's always a line), they're either eating their ice cream at the trunk of their parked cars or sitting at the provided tables and booth outside. Add oldies playing overhead and leftover warmth from the sun and you have a scene that looks like it could be from Grease (who knows, “Summer Nights” might even be in their playlist.)

I step into this scene whenever I'm specifically craving a perfect Orange County summer night. My go-to order is a Joe Latti in mango–in other words, the perfect marriage between creamy custard and tangy ice. Custard-ice-custard sums up the architecture of this dessert, and it always ignites conversations between me and who I'm with. I've found that some like to mix their ice with the custard and others go at each individually. I have my own method: because I'm crazy about making sure I have enough custard for the ice, I eat the left side first so that the right resembles a cliff. This allows me to scoop from the bottom layer of custard through the ice and to the top layer of custard, ensuring I get double custard and the right amount of ice.
