When people who aren't familiar with Vietnamese food want to try it, the first place I suggest is Xanh Bistro. Located outside the bounds of Little Saigon in a shopping center in Fountain Valley, it's an unassuming place, with a number of surprises lurking in the Westerner-friendly menu.
One of those items is a must-order every time I go: the banana blossom salad. The astringent purple flower that hangs at the end of a branch of bananas is sliced into thin, crunchy shreds, then soaked in several changes of lime water for three days. It's tossed with tender grilled pork, more vegetables and a lot of herbs, then dressed in a tangy lime dressing and served with rice crackers studded with black sesame seeds.
It is a revelation.
