Twenty Eight is a Chinese restaurant in Irvine. When you go to Twenty Eight, the modern Chinese restaurant by Top Chef finalist Shirley Chung, don’t settle with old standards or bring frugal Chinese parents. Get the Fire Phoenix, which the menu says is one of her winning creations from the show. It’s basically two pieces of greaseless fried chicken -- a skin-on breast with its wing and the whole leg served next to a salad. Both pieces will be juicy, cooked as though by stopwatch, with the skin rendered to chicharrones. But what makes it a Top Chef-level dish is it’ll come out with a domed cover that’s whisked off tableside with the required dramatic flourish. And when your server does, a cloud of jasmine-tea smoke will escape as though someone took the roof off a Humbolt State dorm room. This smoke imbues everything on the plate, even the salad, with its slightly pungent, slighty sweet imprint -- a flavor more essential to the dish than the lines of peppered salt.
