Wazen is a sushi bar manned by one of the skinniest, most genuinely humble sushi chefs you'll ever encounter. Wazen is also one of the most out of the way restaurants you'll ever have to drive to. It's in a leafy strip mall in Lake Forest that gets eerily quiet past sundown. There's barely a soul there, with few shops open, a deserted parking lot. Most of the cars are huddled around Wazen's door. Even still, on most nights, it's no more than a three-man crew in the kitchen, producing everything from a sea bass misoyaki, sukiyaki hot pot, hand-formed nigiri, and even a winning panna cotta dessert.
