To say this may just be the greatest green curry ever made is disingenuous, but it's certainly one of the best in Orange County. Opt to have pork as the protein to be simmered in it; the pinkish slices they'll stir into the brew will be as tender and forgiving as your first love. Spoon it up along with bamboo shoots julienned into teeny matchsticks, snappy green beans and other lovely vegetable matter that somehow all add to the magic of its unifying liquid. Pour it over a hot plate of rice. Papaya Thai can also do a mean basil-beef stir-fry that overachieves in the freshness, variety and quantity of the ingredients included. Again, all you need is rice. Use plenty of it to sop up the thin, sweet run-off that has also been blessed with a bit of that elusive, smoky wok breath.
