Kang Ho-Dong Baekjeong is a Korean restaurant in Buena Park. Perhaps the best part about eating pork at Baekjeong was that not once did any of it feel greasy. Every piece of hog finished as cleanly on the palate as sashimi. Besides the instructions to mix wasabi into the dipping bowls of a tangy secret house sauce to achieve maximum flavor, nothing the restaurant serves distracts from the meat’s divine provenance. There’s none of those rice noodle mats other Korean barbecue joints often use as filler and few panchan. You will encounter some kimchi, a tiny panjeon pancake, cold tofu and a sugary-glazed sweet potato, but that’s essentially it. In fact, the only side items that matter will be the two salads you’ll nibble between bites of meat for contrast and palate cleansing.
