Inka Cantina is an Peruvian restaurant in Fountain Valley. Its encyclopedic menu journeys through northern and coastal Peru and includes the known (epic tallarines, delicious lomo saltados), the mostly unknown (anticuchos, the beef heart skewers that are the most savory kabobs you can imagine, the Andean chicken soup called aguadito) and the unicorns: You rarely see col de carne, Peru’s version of a stir-fry complete with soy sauce, in Orange County, or a lamb stew so soft it’s almost putty. Even rarer is asado de la abuela—Grandma’s Roast, which is really just beef, mashed potatoes, green beans and gravy and is a dish that could play in Leisure World but whose savoriness is at home here.
