Hendrix is an American restaurant in Irvine. The first thing you see when you walk up to it is the rotisserie. It looks like a vending machine, or at least the heavy-duty version of the “Set It And Forget It” contraption that made Ron Popeil a household name. It has big knobs, glowing heating elements, and wheels. Hendrix puts it up front behind a window as a not-so-subtle suggestion of what you should be ordering.  Its appeal can’t be denied. Whole chickens twirl and drip juices onto trays of peewee potatoes. Beneath them spin porchetta and a whole leg of lamb on a spit. At random times, a worker walks out to tend to it, take off what was done, and then return to a carving room that’s visible from the hostess podium. And it’s here, in this room, that he slices, chops, and plates these roast meats into three of the restaurant’s best dishes.
